Greek Recipes: Cretan Dakos

Prescriptions

  1. Ingredients
  2. 3 Big Barley Rusks
  3. 3 Big Spoons of virgin olive oil: 1 spoon for each rusk
  4. 9 gr of sea salt: 3 gr salt for each rusk
  5. 300 gr trimmed tomatoes (100 gr for each rusk) or 30 gr compressed tomatoes (10 gr for each rusk)
  6. 30 gr oregano (10 gr for each rusk)
  7. 300 gr yogurt and / or Feta minimum (100 gr for each rusk).

II.      Implementation and Guidelines

Firstly, we take the rusks, then we pour the virgin olive oil on each rusk and then we put the sea salt. Finally, we pour the trimmed or compressed tomatoes and spread the oregano.

We “escort” and put yogurt and / or feta on our plate. So, we are ready to serve, eat and drink.

This is an all around the day and night snack-plate and the cost of this high quality snack-plate must be no less than 9 euros for precious and profitable reasons.

This snack – plate is highly nutritious, healthy, with antioxidants, proteins and vitamins. I have prepared and enjoyed it many thousand times and I estimate that it will satisfy efficiently the hunger of many people-customers-clients and tourists. Last but not least one-two-three treated shots of raki or rakomelo and you might feel more satisfied.

MAIN MENU “HELLENIC-CHINESE RED SOUP”

INGREDIENTS

1 Kg Chinese Rice “Nihaki”

1 chicken cube “Knorr”

3 sliced big garlics

3 Big Spoons Virgin Olive Oil

1 small spoon salt

3 big spoons of compressed tomatoes “Kyknos”

3 stirred chicken eggs

10 sliced portions of bacon

10 sliced Mushrooms

1 little bottle of Red “Tobasco”

EXECUTION

  1. We put 6 litres of water in a big stewpot.
  2. We put all the ingredients except from the “Tobasco” in the stewpot and keep boiling them until we taste that the soup is cooked.
  3. We serve in big and deep plates and we pour as many drops of Tobasco we like (more drops, more spicy food) and pepper. The estimate is that this main menu is for four people-ideal for countries, when the climate is cold- ideal for a “light” menu- ideal for recommended price of 9-11 Euros, just for the main menu- ideal for old and mature people with teeth problems-but also for hangovers and spicy soup lovers.

Economic Recipes for Middle and Low Class People

“Hot Asian Mix”

1. Ingredients

  • 900-1000gr ground pork meat
  • 3 chicken eggs
  • 3 spoons of virgin olive oil
  • 1 Middle size onion
  • 3 Lemons
  • 3 small spoons of wine vinegar
  • 1 Big spoon of Red Chilli
  • 9 Drops of Hot Tobasco
  • 1 Big Spoon of Cinnamon
  • 1 chicken stock cube

2. Preparation

  1. We take a deep plate.
  2. We put the ground pork meat in the plate
  3. We cut the onion in many small pieces and put it in the plate.
  4. We take the juice from the lemons and put it in the plate
  5. We put the wine vinegar in the plate
  6. We put the Chilli in the plate
  7.  We put the hot tobasco in the plate
  8. We put the cinnamon in the plate
  9. We put adequate water in a coffee pot and drop the chicken stock cube in it, we boil it and drop it in the plate.
  10. We put the olive oil in the plate.
  11. We stir all the above very well until it becomes a solid mix

3. We put the mix in a middle size frying pan, we fry it for a minimum of 8 minutes,  stir it with a big wooden spoon from time to time during the fry, we test the cooking result by eating a small portion.  If it is approved by ourselves, we put it in a big plate, we service it, we sit at the table and eat it.

4. The person who did almost nothing or the less job, cleans everything and puts the clean kitchenware and cookware at their positions for the next recipe and eating.

5. We make a glass of cold or a cup of hot coffee , we take a chilled bottled water or a soft drink, take them upstairs and drink it there for peace of mind. We make a break for 30 minutes to drink and smoke some cigarettes of our choice by leaving a small window opening for letting the smoke to go inside-out and then we continue doing whatever we like and we go wherever we like or take a noon-afternoon-evening nap for 90-120 minutes inside.

Bakery-Military Nutrition-Snack and Drink

I visited a #bakery and I bought three #breads. I am very happy to realize that the bread was excellently baked, fresh and crispy. I guess that the ingredients was also of excellent quality. I can say this because in 1997 I had to do also the #baker as part of my First Month #Naval duties. Then I remember the ingredients in order to make bread for the #sailors, low rank #officers, medium rank officers and high rank officers was of poor quality. The result was a bread of poor quality compared to these I bought today and the main reason is the poor quality of ingredients. I believe this bakery can teach them how to make excellent bread that Naval and other #MilitaryForces deserve. I also remember that the #food in the #Navy was plenty but the quality could be much better, as well as the #nutrition, in order to maintain a good body and #stamina and offer much better #services. Last but not least, I cut a rounded corner of country bread, I added our #VirginOliveOil, Greek #Feta, our tiny red #tomatoes, some salt and #tsili. My result was an excellent #snack for my noon break, combined with a #lemonsoda on #ice.
